Instructions
1) Crust (Optional)
Crush the biscuits in a bag, mix with melted butter, and press firmly into the bottom of your pan. Chill in the fridge.
2) Matcha Paste
Whisk the matcha with 2 tbsp of hot water until it forms a smooth, lump-free paste.
3) Batter
Beat the softened cream cheese until smooth. Mix in the sugar, then add the eggs one at a time, blending well. Pour in the heavy cream and matcha paste, stirring until uniform.
4) Flour
Sift in the cake flour and gently fold with a spatula until just combined.
5) Bake & Chill
Pour into the pan and bake at 160°C (320°F) for 40–45 minutes. Stop baking while the center still has a slight jiggle. Once cooled, refrigerate for at least 3 hours.
6) Finish
Remove from the pan and dust with powdered sugar or extra matcha to taste.
