Line the loaf pan with parchment paper.
2. Melt chocolate and butter
Place white chocolate and butter in a bowl and melt gently over a double boiler. Mix until smooth.
3. Add eggs and sugar
In a separate bowl, whisk eggs and sugar until combined.
Gradually add to the chocolate mixture, mixing carefully to avoid separation.
4. Add cream and matcha
Add heavy cream and sifted matcha powder. Mix thoroughly until smooth and uniform.
5. Add cornstarch
Sift in the cornstarch and fold gently.
6. Bake
Pour batter into the pan.
Place the pan in a larger tray filled with hot water (water bath).
Bake at 160°C for 25–30 minutes.
The surface should be set while the center remains slightly soft.
7. Chill to finish
Allow to cool, then refrigerate overnight.
Warm the knife before slicing for clean, beautiful cuts.
