A Crisp Exterior and Mochi-Like Center: How to Make Matcha Pão de Queijo
Hello everyone, I’m Keko, a member of the online staff! 😊
Slightly crisp on the outside, delightfully chewy on the inside. Have you ever encountered a bread with such a joyful texture?
Today, I’d like to introduce a unique recipe: an elegant matcha twist on "Pão de Queijo", the beloved cheese bread born in Brazil.
The richness of cheese and the subtle bitterness of matcha. At first glance, it may seem like an unexpected combination. Yet, once in your mouth, their flavors gently overlap, creating a sophisticated, savory taste tailored for adults.
Perfect for breakfast, an afternoon snack, or whenever you feel a little peckish. Let’s look at the recipe to enjoy this chewy texture and vibrant matcha aroma!

Why You’ll Love This Recipe
・A fun, chewy, and pillowy Brazilian-style cheese bread.
・A mature flavor where the richness of cheese balances the gentle bitterness of matcha.
・Naturally Gluten-Free (made with tapioca starch).
・Freezer-friendly, ready to be reheated and enjoyed anytime.
Ingredients (Makes about 15 pieces)
|
・Tapioca Starch (or Tapioca Flour): 150g |
Instructions
1) Preparation
Preheat your oven to 180°C (350°F).
2) Create the Base Dough
Combine milk and oil in a saucepan and heat until just before it reaches a boil. Place the tapioca starch in a bowl, pour in the hot liquid all at once, and mix thoroughly with a spatula until the starch becomes translucent.
3) Incorporate the Ingredients
Add the beaten egg gradually, mixing well to ensure no lumps form. Then, add the Matcha Standard, grated cheese, and salt, mixing everything together until fully combined.
4) Shape
Coat your hands with a small amount of oil and roll the dough into balls about 3cm in diameter. Place them on a baking sheet, leaving some space between each. ※The dough will be quite sticky, so oiling your hands makes it much easier to handle.
5) Bake
Bake at 180°C for 20 to 25 minutes until the surface is lightly golden.
Best Ways to Enjoy It
・Fresh Out of the Oven: Crispy on the outside, chewy on the inside. The heat beautifully elevates the aroma of matcha.
・With a Dash of Flavor: Try serving them with a side of matcha salt or extra parmesan cheese for a delightful twist.
・Pair with Matcha Lattes: Enjoy them alongside a low-sweetness matcha latte or soy matcha milk for a perfect breakfast.
Freezing & Reheating
-
To Freeze: Once completely cooled, wrap them individually in plastic wrap and store them in the freezer.
-
To Reheat: Warm them in a toaster oven for about 5 minutes to restore that wonderful crisp exterior.
Creative Variations
・Add white sesame seeds or black pepper for an extra kick of aroma.
・Stuff the center with Koshi-an (smooth red bean paste) or cream cheese for a hidden surprise.
・Swap to Matcha Starter for a slightly sweeter, snack-style version.
Matcha, while rooted deeply in traditional Japanese culture, naturally blends and dissolves into different culinary worlds like this.
Meeting the richness of cheese.
Overlapping with the chewy texture.
Expanding into an entirely new flavor.
This is another way to experience matcha, a little different from the usual. I truly hope you enjoy this freshly baked aroma at your table.
