Ingredients (makes about 20 pieces, 2cm cubes)

Heavy cream (35% fat or higher): 100 ml
Granulated sugar: 80 g
Honey (or glucose syrup): 20 g
Unsalted butter: 20 g
Matcha (Matcha Premium): 1.5 tsp (about 3 g)
Water: 20 ml

 

Instructions

1. Preparation
Line a tray with parchment paper.
Dissolve the matcha with a small portion of the cream to make a smooth paste.

2. Make the caramel
In a saucepan, combine sugar, honey, and water.
Heat over medium heat until dissolved, then increase heat slightly.
Swirl the pan gently and cook until it reaches a light caramel color.

3. Add cream and matcha
Reduce heat and slowly add the warmed cream.
Then add the matcha paste and stir.
Cook for about 5–7 minutes until the mixture thickens.

4. Finish
Remove from heat and add butter.
Stir until melted and glossy.
Pour into the prepared tray and smooth the surface.

5. Chill and cut
Let it cool, then refrigerate for 2–3 hours.
Once firm, remove from the tray and cut into cubes using a warmed knife.

Tips
Dissolve matcha in cream first to avoid lumps
Be careful not to overcook, or it may become too firm
Warm the knife before cutting for clean edges
Store in the refrigerator, especially in humid conditions

Variations
Dust lightly with powdered sugar or matcha
Add a little white chocolate for extra creaminess
Mix in chopped nuts for added texture
