1)Preparation
Preheat the oven to 180°C (356°F). Cut the butter into 1cm cubes and chill in the fridge.
2)Mix the dry ingredients
In a bowl, combine flour, baking powder, matcha powder, and sugar. Whisk well.
3)Add the butter
Add cold butter to the dry ingredients and rub it in with your fingertips until the mixture resembles breadcrumbs.
4)Add milk
Pour in the milk and fold gently with a spatula until the dough just comes together.
5)Shape the dough
Turn the dough onto a floured surface. Fold it 3–4 times gently to create layers. Roll out to 2–3 cm thick and cut into shapes.
6)Finish and bake
Brush the tops with egg yolk, add toppings if desired, and bake for 15–20 minutes at 180°C (356°F).
Tips for Best Results
Keep the butter cold and don’t overwork the dough for the best texture.
Allow the scones to cool slightly after baking—the matcha aroma will bloom beautifully.
