This cozy drink blends the rich umami of premium matcha with the natural sweetness of amazake (a traditional Japanese fermented rice drink), and adds a touch of aromatic dark rum. It’s not overly sweet, but gently layered—perfect as a nightcap or even as a dessert drink.

| Ingredients (for 1 cup) Premium Matcha: 2g (whisked with 60ml hot water) Amazake (unsweetened, rice-koji based): 80ml Milk or soy milk: 40ml Dark rum: 20ml Brown sugar or maple syrup: 1–2 teaspoons |
Instructions
1️⃣ Gently warm amazake and milk in a small saucepan over low heat until around 70°C (do not boil).
2️⃣ Turn off the heat and stir in the rum and sugar until dissolved.
3️⃣ Prepare the matcha separately and whisk it until frothy, then pour it into the warm amazake mix.
4️⃣ Pour into a cup and garnish with a sprinkle of matcha powder or cinnamon if desired.
