Ingredients (for 2–3 servings)

Shredded cheese (for pizza): 150 g
Milk: 100 ml
Sake (or white wine): 2–3 tbsp
Cake flour: 1 tsp (lightly coat the cheese to prevent separation)
Matcha Starter: 1 tsp (about 2 g, sifted)
Salt: a pinch
Black pepper: to taste

Recommended dippers
Baguette, focaccia, grilled green onion, pumpkin, broccoli, lotus root, grilled chicken, shrimp, scallops, atsuage (fried tofu), ganmodoki, mochi, and more.

 

How to Make

1.Prepare the cheese
Coat the shredded cheese lightly with cake flour.

2.Make the base
In a saucepan, gently heat the milk and sake (or white wine). Add the cheese little by little, stirring slowly with a spatula until smooth.

3.Add the matcha
Just before turning off the heat, sift in the Matcha Starter and stir to combine.

4.Finish
Season with salt and pepper. Serve in a fondue pot and enjoy with your favorite dippers.
