Matcha Focaccia 🍞🌱
You might be thinking, “Matcha in focaccia? Really?”
I thought so too, at first! But once I tried it, I was pleasantly surprised 😳✨
The subtle aroma of matcha, the richness of olive oil,
and a hint of coarse salt come together in such a sophisticated way—
I thought to myself, “Ah, this must be what a grown-up flavor feels like.” ☺️
📝 Matcha Focaccia – Ingredients (for 1 baking sheet) Bread flour: 200g Matcha Starter: 4g (about 2% of flour weight) Water (around 26°C): 180g Salt (reduced sodium): 4g Sugar: 2g (to balance the flavor) Dry yeast: 3g Olive oil: 20g (14g for dough, 6g for finishing) Coarse salt for topping: as desired |
Instructions
1️⃣ In a bowl, mix the water, salt, and sugar.
Then gently sprinkle the dry yeast on top and let sit for about 1 minute.
2️⃣ Add the flour and Matcha Starter, and mix using a spatula in a cutting motion.
Once it comes together into a dough, you’re good to go ◎
3️⃣ Pour in 14g of olive oil and fold it into the dough using your spatula.
The dough will begin to develop a lovely sheen ✨
4️⃣ Let the dough rise at room temperature for 1 hour, until it doubles in size.
(Tip: This is the perfect time to enjoy a cup of tea 🍵)
5️⃣ Lightly oil your baking sheet and spread out the dough.
Use your fingers to make dimples,
then drizzle with the remaining olive oil and sprinkle with coarse salt.
6️⃣ Let the dough rest for 10 minutes, then bake at 210°C (410°F) for 14–15 minutes.
Be careful not to overbake—preserving the aroma is key ☝️
Optional: For extra color, increase the temperature to 230°C (445°F) for the final 2 minutes.
A Few Tips
Matcha’s aroma can fade if overheated—so bake just until lightly golden.
Feel free to add a little extra salt on top for a “salted butter” flavor twist 🧂
