Maritozzo, originally from Rome, is known for its soft bread filled with luscious whipped cream. In this recipe, we make them mini-sized using a Japanese takoyaki pan and fill them with matcha whipped cream for a delightful East-meets-West dessert.

Instructions
1.Make the batter
Whisk eggs in a bowl, then add milk and honey. Mix well. Add the pancake mix and stir until smooth, then blend in the oil or melted butter.
2.Cook in the takoyaki pan
Preheat the takoyaki pan on medium heat and grease the molds. Pour batter to about 70–80% full. When the surface begins to set, rotate with a skewer to form balls. Cook until golden on all sides and set through. Let cool.
3.Prepare the matcha whipped cream
Beat the cream with sugar and sifted matcha until semi-firm peaks form. Transfer to a piping bag and chill.
4.Assemble
Slice the cooled pancake balls partially open, pipe in plenty of matcha cream, and close gently. Dust with extra matcha powder or powdered sugar if desired.
Tips for Success
Keep the heat on low to medium-low—the honey makes the batter prone to burning.
Remove when lightly golden and springy to the touch for the best texture.
Whip the cream slightly firm so it holds shape and looks beautiful when served.
