Today, I’m excited to share a recipe that’s simple yet impressively aromatic: homemade Matcha Oil and a fragrant pasta dish using shirasu and Parmesan cheese. Perfect for early winter evenings or cozy weekend lunches.

How to Make Matcha Oil
Fragrant. Vibrant. Versatile.
This matcha-infused oil is created through a low-temperature method that preserves the natural aroma and vivid green color of high-quality Japanese matcha.

 Ingredients (approx. 100ml yield)
3g Matcha Starter
100ml Extra Virgin Olive Oil
A pinch of salt

 

Instructions:
Sift the matcha through a fine strainer and mix well with olive oil.
Pour into a clean, dry jar and store in a cool, dark place for 12–24 hours.
Shake well before using. (Best enjoyed within 3 days to preserve the aroma.)

This fragrant oil is perfect for drizzling over roasted vegetables, white fish, tofu, bread—or as you’ll see next, even pasta.

Matcha Oil Pasta with Shirasu and Parmesan
Simple yet rich in flavor, thanks to the fusion of umami and fresh green tea notes.

 Ingredients (serves 2)
160g Pasta (fettuccine or linguine recommended)
2–3 tbsp Matcha Oil
1 garlic clove, minced
40–50g Boiled Whitebait (shirasu)
Grated Parmesan Cheese, to taste
Salt, for boiling pasta
Black pepper, to finish

 

Instructions:
Boil the pasta
 Cook pasta according to package instructions in salted water (1% salt).

Infuse the oil
 In a pan, add matcha oil and minced garlic. Heat gently over low heat until fragrant, then remove from heat just before garlic browns.

Toss with pasta
 Add drained pasta to the pan and quickly toss to coat. For extra silkiness, add a spoonful of pasta water to emulsify.

Add toppings
 Off the heat, gently fold in shirasu to keep its delicate texture.

Serve and finish
 Plate the pasta, sprinkle with Parmesan, drizzle extra matcha oil if desired, and top with a touch of black pepper.

How to Enjoy
Pair this pasta with white wine or a non-alcoholic drink like cold-brewed sencha.
For a full-course experience, add a light appetizer like caprese or roasted seasonal vegetables. The aroma of matcha will tie everything together beautifully.
