At our shop, we grade our Shincha (new tea) by the evolution of its aroma. This begins with "Mirume-ka"—the rare, delicate scent found only in the youngest buds—followed by "Shincha-ka" as the leaves mature, and finally the vibrant "Standard Sencha aroma."

Our top-tier Shincha "Matsu" is a true masterpiece. Upon the first sip, the ethereal Mirume-ka unfolds on the palate, leaving a lingering Shincha-ka in its wake. It offers a profound depth of umami and sweetness that transcends description, inviting you to engage all five senses in a complex, interlacing journey of flavor.

In Uji, Kyoto, harvesting begins in late April, but only the earliest-picked buds yield the coveted Mirume-ka. To preserve this fleeting fragrance, we employ meticulous craft: light steaming and minimal firing. The result is a harmonious fusion of sweetness, umami, and a refined bitterness reminiscent of the seven herbs of spring—the very essence of Uji.

As these volatile aromas are at their peak for only a short time, we invite you to savor this seasonal gift as soon as possible.
