Harvesting in Kyoto begins around late April, but only a limited selection of tea leaves possesses the quintessential aroma of Shincha (new crop tea). Depending on the region and the size of the young buds, those plucked by early May are typically the prime candidates. We keep the steaming process light and minimize the Hiire (final roasting) specifically to preserve and highlight this captivating fragrance.

At our shop, we categorize the aromas based on the growth stage: "Mirume-ka," the delicate scent found only when the buds are extremely small; "Shincha-ka," found as they grow slightly larger; and "Fresh Sencha Aroma," which aligns with high-quality standard Sencha.

Our Shincha "Take" is characterized by the distinct "Shincha-ka" (new tea aroma) that lingers beautifully on the palate. This clear, refreshing fragrance is the hallmark of this grade, providing a vibrant sensory experience with every sip.

The flavor profile—where Shincha aroma, sweetness, umami, and a refined, delicate bitterness reminiscent of spring herbs fuse at a high level—truly embodies the essence of Uji, Kyoto. It offers a refreshing yet sophisticated experience that marks the arrival of the new season.
