While "Premium Hatsu-Mukashi “ No.1 ”" and "Premium Hatsu-Mukashi “ No.2 ”" pursued a multi-layered world of umami derived from "Asahi" cultivars grown in Shirakawa, "Premium Hatsu-Mukashi “ No.3 ”" is a matcha that focuses on the vibrant aroma and the lingering aftertaste of "Asahi" nurtured by the soil of Naka-Uji and Gokasho.
Two types of "Asahi" that earned high acclaim at the 2025 National Tea Competition were meticulously blended (gogumi), aged to perfection, and then carefully stone-ground using a tea mortar.
Rather than focusing solely on the volume of umami itself, this matcha is designed to accentuate the "depth of aroma" and "beauty of the aftertaste" inherent to matcha as a beverage.
